Carnivore Cookies. Zero carbs

These Carnivore Cookies are a great snack or dessert option that fits into a strict carnivore or zero-carb lifestyle. They are made primarily with animal-based products and are both easy to prepare and deliciously indulgent. No flour, no sugar—just pure, rich flavor.

Ingredients:

    • 1 cup unsalted butter, softened
    • 1 cup pork rinds, crushed (use unflavored and unsweetened pork rinds for the best texture)
    • 1/2 cup collagen peptides (this helps with texture and gives a little boost of protein)
    • 2 large eggs
    • 1/4 cup powdered erythritol or your preferred carnivore-friendly sweetener (optional, depending on your taste preference)
    • 1 tsp vanilla extract (optional for flavor)
    • 1/4 tsp sea salt (or to taste)
  • 1/4 tsp baking soda (optional, for slight fluffiness)
  • 1/2 cup sugar-free dark chocolate chips (optional, for a little indulgence—look for 100% cocoa with no added sugars)

Instructions:

    • Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.
    • Prepare the Dough:
In a large mixing bowl, beat the softened butter until creamy and smooth. You can do this with a hand mixer or stand mixer, or use a whisk if mixing by hand. Add in the eggs, one at a time, beating after each addition.
    • Add the Dry Ingredients:
To the butter and egg mixture, add the crushed pork rinds, collagen peptides, erythritol (if using), vanilla extract (if using), sea salt, and baking soda (if using). Stir everything together until fully combined. The dough should be thick but slightly sticky. If it’s too loose, add a bit more collagen or crushed pork rinds.
    • Optional Add-ins:
If you’re using sugar-free chocolate chips or any other mix-ins, fold them into the dough now.
    • Shape the Cookies:
Scoop out small portions of the dough (about 1 tablespoon per cookie) and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart. Flatten each ball slightly with the back of a spoon or your fingers to form cookie shapes.
    • Bake:
Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are golden brown. Keep an eye on them, as baking times may vary depending on your oven.
  • Cool and Enjoy:
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy them warm or at room temperature!

Tips & Variations:

    • Texture Adjustments: If you prefer a softer cookie, reduce the baking time slightly. For a crispier texture, bake a minute or two longer.
    • Sweetener Options: You can leave the sweetener out entirely if you prefer no sweetness, or adjust the amount to suit your taste.
  • Flavor Variations: Add a pinch of cinnamon or nutmeg for a little extra flavor, but keep it simple to stay within the carnivore framework.

These cookies are perfect for satisfying a craving without breaking your carnivore lifestyle. Enjoy!
